Cottage Cheese Pie

(Mrs. Tapper)

2 cups smooth cottage cheese

1 cup sugar or more if desired

3 eggs

1 tsp. vanilla

juice of 1/2 lemon or more if desired

pinch salt

1 tbsp. melted butter

1 tbsp. cornstarch (add more if you add additional lemon juice)

1/4 tsp. cinnamon or nutmeg

1/4 cup raisins if desired

Beat eggs thoroughly. Then add rest of ingredients. Bake in an uncooked pie shell in a moderately hot oven.
