Smothered Rabbit 

     Select a young rabbit. Cut up and let stand in salty water for 1/2 hour. Season with salt and pepper, sprinkle lightly with flour, and brown in hot fat. When brown, add 1/2 cup hot water; cover and continue cooking very slowly either on top of stove or in oven. When tender, remove meat and set aside. add lump of butter to drippings in pan and 1/2 cup water to make gravy. Pour gravy over rabbit and serve. 

     Rabbit, for a long time, has been known in the South as "depression food". Like a lot of appetizing old favorites however, such as "soul food", it is now recognized as simply good eating. Rabbit can be fried; barbecued; roasted with vegetables; stuffed with onion and baked; made into hash; and made into a stew. Is it any wonder that it was a much sought after animal?
