Old Time Fruit Cake

5 large eggs (beaten)

1/2 pound butter or margarine

1 cup sugar

1 3/4 cup plain flour (all purpose)

1/2 teaspoon baking powder

3/4 pound of candied cherries

1 pound of candied pineapple

4 cups chopped nuts (we use pecans)

1/2 ounce vanilla flavoring

1/2 ounce lemon flavoring


1.....Cream butter, add sugar gradually, creaming until fluffy , add beaten eggs.
 
2.....Blend nuts and fruits.  Mix well with part of the flour until fruit is coated with flour.
 
3.....Sift remaining lour and baking powder together .  Fold into butter and egg mixture.
 
4.....Add flavorings and then fold in the nuts.
 
5.....Pour into greased a tube pan which has been lightly greased and floured. or (2 loaf pans)  Place in cold oven then turn temperature to 252 degrees for 3 hours (loaf pans are cooked for 2 1/2 hours.)
 
6.....After taking cake out of oven, let it stand in the pan for for 1 hour before removing from pan
 
OPTIONAL:  Place in a cake can and put a good red apple in the center of the cake. cover with cloth moistened  in wine of your choice let stand for at least l day.  Be sure to keep check on cloth on cake and keep wine cloth moist.
