Pineapple or Apple Frying Pan Cake

2 tbsp. butter

1 cup brown sugar

sliced pineapple or apple

nuts, cherries if desired

Melt butter in iron skillet. Set off fire. Add sugar, pineapple, nuts, etc. in bottom of pan. Cover with the following 1 egg cake.

1 egg cake:
1 1/2 cup flour

2 1/2 tsp. baking powder

pinch salt

1/2 cup sugar

1.2 cup milk

1 egg


3 tbsp. shortening, melted

Sift together dry ingredients. Beat together liquid ingredients. Mix the two together, using pineapple juice for liquid.
