Coconut Cake

1/2 cup butter or substitute

3/4 cup sugar

Yolks of 3 eggs, beaten,/4 cup sugar

3 cups flour, sifted

1/2 tsp. salt

3 tsp. baking powder

1 cup coconut milk

1 tsp. vanilla

whites of 3 eggs

Cream together butter and first of the sugars. Mix in egg yolks, then second sugar. Sift together dry ingredients, 3 times. Mix with butter mixture. Add coconut milk. In separate bowl, beat egg whites stiffly. Fold in to mixture. Bake in 3 small or 2 large layer pans.

Icing: Boil 1 3/4 cup sugar and 2/3 cup water until thready. Beat whites of 2 eggs until stiff. Pour syrup over egg, beating. Add vanilla, 1-2 tsp. Use 1-2 cups grated coconut.
