Arkie Self Southern Peanut Brittle
1 1/2 cup of sugar
1 cup of light Karo syrup
1 package of unsalted raw peanuts (about 8 ounces)
Mix sugar and Karo together on high heat for about 3 minutes.
Add raw peanuts, bring to a boil and maintain boil until mixture turns to an amber color- about 5-8 minutes.
Remove from heat and add 3 Tablespoons of butter and 1/2 teaspoon of baking soda.
Pour onto greased cookie sheet and spread out.
Let cool, then break into pieces.
My children and grandchildren request this recipe every Christmas.
