Raised Doughnuts, Cinnamon Rolls, or Parker House RollsYields 5 dozen 1 quart milk (Warm, 90 degrees) 1 cup sugar 1 cup lard 1/2 tsp. salt 2 eggs Flour to make a fairly stiff dough (about 2 sifters) 2 yeast cakes Mix above ingredients, and keep at about 90 degrees heat by putting in mixing pan over slow flame. Make the dough and set to rise, 1 hour or until when punched it keeps going on down. Let rise again after punching down with spatula. Use just enough flour to roll out. Form into rolls, dough, etc. Let rise about 20 minutes or until double size. Bake 15-20 minutes in moderate oven. **Note: Grease sides of pan before setting dough to rise. ** Sugar doughnuts with granulated sugar, put raisins in cinnamon rolls.
